Instructions
Preparation
Cook the penne pasta in boiling water until 1-2 minutes short of the package's full cooking time, then drain.
Preheat your oven to 375°F (190°C).
In a skillet, sauté the shrimp and chopped bell peppers with Cajun seasoning until the shrimp are pink and cooked through.
In a separate pot, melt the cream cheese and heavy cream together, stirring until smooth and creamy.
Combine the cooked penne, sautéed shrimp, and peppers with the creamy mixture.
Transfer everything to a baking dish.
Top generously with Parmesan cheese and bake in the preheated oven for about 20-25 minutes or until bubbly and golden on top.
Continue baking as necessary until the center is hot and the edges are bubbling.
If the topping browns too quickly, cover loosely with foil.
Rest for 5 minutes before serving.
Notes
Warm dairy gently and stir until smooth to avoid separation. Keep the pasta slightly firm, and reserve some cheese for topping. Refrigerate leftovers promptly and reheat until hot throughout.
