Ingredients

For the lasagna

  • 9 pieces lasagna noodles Cooked according to package instructions
  • 1 pound shrimp, peeled and deveined Ensure shrimp are fully cooked but not overdone
  • 2 cups Alfredo sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded Reserve half for layering
  • 1/2 cup Parmesan cheese, grated For topping
  • 1 large egg
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to garnish Fresh parsley For serving

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook lasagna noodles according to package instructions; drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add minced garlic and shrimp to the skillet, then sauté until the shrimp turns pink, about 3-5 minutes. Season with salt and pepper to taste.
  • In a bowl, mix the ricotta cheese, egg, and half of the shredded mozzarella cheese until well combined.

Assembly

  • In a baking dish, spread a thin layer of Alfredo sauce on the bottom. Layer 3 lasagna noodles on top, followed by half of the shrimp mixture, half of the ricotta mixture, and then another layer of Alfredo sauce.
  • Repeat the layering process: add another layer of noodles, followed by the remaining shrimp mixture, remaining ricotta mixture, and more Alfredo sauce.
  • Finish the assembly with the final 3 noodles on top. Spread the remaining Alfredo sauce evenly over the noodles and top with the remaining mozzarella cheese.
  • Sprinkle the grated Parmesan cheese on top.

Baking

  • Cover the baking dish with foil and bake for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the top is bubbly and golden.
  • Once baked, let the lasagna stand for 10 minutes before serving. This resting time allows the layers to set, making it easier to cut.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding spinach or sautéed mushrooms between the layers. If you prefer a spicy kick, add crushed red pepper flakes to the shrimp mixture. You can prepare this dish in advance and refrigerate it before baking. Just add an extra 10-15 minutes to the baking time if it’s cold when it goes into the oven.
