Scotcharoos Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1/4 cup butter (cut into pieces)
  • 1 1/2 cups creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon table salt
  • 6 cups crisped rice cereal
  • 1 cup semisweet chocolate chips
  • 1 1/3 cups butterscotch chips (divided)
  • 1 1/2 teaspoons coconut oil or vegetable shortening (optional)

Instructions
 

  • Prepare the pan by lining it with foil or parchment paper and greasing lightly with butter.
  • Combine corn syrup, sugar, and butter in a large pot over medium-low heat. Stir occasionally until butter melts and ingredients are well-combined.
  • Increase heat to medium-high, boil the mixture, then remove from heat. Stir in peanut butter, vanilla extract, and salt until smooth.
  • Mix in the crisped rice cereal until well-combined, then spread into the prepared pan evenly.
  • In a microwave-safe bowl, melt semisweet chocolate chips, 1 cup of butterscotch chips, and coconut oil. Mix until smooth.
  • Spread the chocolate mixture over the Scotcharoos, then drizzle with the remaining melted butterscotch chips. Create swirls with a toothpick.
  • Allow the chocolate to set, then cut into squares and serve.

Notes

For a nutty twist, add chopped peanuts on top of the chocolate layer before chilling.
