Scotcharoos Ingredients
1cuplight corn syrup
1cupgranulated sugar
1/4cupbutter (cut into pieces)
1 1/2cupscreamy peanut butter
1/2teaspoonvanilla extract
1teaspoontable salt
6cupscrisped rice cereal
1cupsemisweet chocolate chips
1 1/3cupsbutterscotch chips (divided)
1 1/2teaspoonscoconut oil or vegetable shortening (optional)
Instructions
Prepare the pan by lining it with foil or parchment paper and greasing lightly with butter.
Combine corn syrup, sugar, and butter in a large pot over medium-low heat. Stir occasionally until butter melts and ingredients are well-combined.
Increase heat to medium-high, boil the mixture, then remove from heat. Stir in peanut butter, vanilla extract, and salt until smooth.
Mix in the crisped rice cereal until well-combined, then spread into the prepared pan evenly.
In a microwave-safe bowl, melt semisweet chocolate chips, 1 cup of butterscotch chips, and coconut oil. Mix until smooth.
Spread the chocolate mixture over the Scotcharoos, then drizzle with the remaining melted butterscotch chips. Create swirls with a toothpick.
Allow the chocolate to set, then cut into squares and serve.
Notes
For a nutty twist, add chopped peanuts on top of the chocolate layer before chilling.
