5gEspresso powder

Mascarpone Frosting
150gMascarpone (41% fat content, cold)
120gHeavy cream (36% fat content, cold)
40gPowdered sugar (sifted)
1-2tbspCocoa powder (unsweetened)
Instructions
In a bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and mix well. Sift in the flour, espresso powder, salt, and baking soda. Mix until dough forms. Scoop and flatten dough on baking sheet, then bake.
Whip the mascarpone, heavy cream, and powdered sugar until stiff peaks form. Transfer to piping bag with nozzle tip. Pipe frosting on cookies and dust with cocoa powder before serving.
