Ingredients
  

Cookies

  • 150 g Unsalted butter (room temperature)
  • 100 g Brown sugar
  • 70 g Granulated sugar
  • 1 Egg (room temperature)
  • 200 g All-purpose flour
  • 5 g Espresso powder
  • 1 tsp Salt
  • 1 tsp Baking soda

Mascarpone Frosting

  • 150 g Mascarpone (41% fat content, cold)
  • 120 g Heavy cream (36% fat content, cold)
  • 40 g Powdered sugar (sifted)
  • 1-2 tbsp Cocoa powder (unsweetened)

Instructions
 

  • In a bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and mix well. Sift in the flour, espresso powder, salt, and baking soda. Mix until dough forms. Scoop and flatten dough on baking sheet, then bake.
  • Whip the mascarpone, heavy cream, and powdered sugar until stiff peaks form. Transfer to piping bag with nozzle tip. Pipe frosting on cookies and dust with cocoa powder before serving.

Notes

For a richer flavor, you can add a splash of coffee liqueur to the frosting mixture.
