2 medium zucchinis, grated
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup all-purpose flour
2 large eggs
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
1 teaspoon garlic powder
Salt and pepper to taste
Olive oil for frying

You can easily substitute the cheese for your favorite blend or even use a dairy-free option.

Directions to follow

Start by grating the zucchinis. Be sure to squeeze out excess moisture using a clean cloth to ensure the patties hold together well.
In a large mixing bowl, combine the grated zucchini with the cheese, flour, eggs, parsley, chives, garlic powder, and a pinch of salt and pepper.
Heat olive oil in a skillet over medium heat.
Using a scoop, drop the zucchini mixture into the skillet and flatten it gently with a spatula to form patties.
Cook for 3-4 minutes on each side, until they are golden brown and crispy to your liking.
Once cooked, remove the patties from the skillet and drain them on paper towels.
Serve warm and enjoy these tasty treats!

Best ways to enjoy it

Cheesy Zucchini Patties are versatile! Serve them as an appetizer, a light lunch, or a side dish. They pair beautifully with a dollop of sour cream or yogurt-based sauce on top. To elevate your dining experience, consider serving them alongside a fresh garden salad or some tangy coleslaw for a refreshing contrast.

Storage and reheating tips

If you happen to have leftovers, you can store them in an airtight container in the fridge for up to three days. To reheat, simply place them in a preheated oven at 350°F (175°C) for about 10 minutes, or until heated through. Alternatively, you can also use an air fryer to restore their crispiness. For longer storage, consider freezing them for up to two months. Just be sure to place parchment paper between layers to keep them from sticking.
