  • 2 medium zucchinis, grated Squeeze out excess moisture before mixing
  • 1 cup shredded cheese (cheddar or mozzarella) Can be substituted with your favorite blend or a dairy-free option
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions

Preparation

  • Start by grating the zucchinis and squeezing out excess moisture using a clean cloth.
  • In a large mixing bowl, combine the grated zucchini with cheese, flour, eggs, parsley, chives, garlic powder, and a pinch of salt and pepper.
  • Heat olive oil in a skillet over medium heat.

Cooking

  • Using a scoop, drop the zucchini mixture into the skillet and flatten it gently to form patties.
  • Cook for 3-4 minutes on each side until they are golden brown and crispy.
  • Once cooked, remove the patties from the skillet and drain them on paper towels.
