What you’ll need

Gather the following ingredients to make your Chocolate Vegan Banana Brownies:

2 ripe bananas, mashed
1 cup almond flour
1/2 cup cocoa powder
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup vegan chocolate chips (optional)

Feel free to adapt the recipe based on what you have at home. For example, using whole wheat flour instead of almond flour can yield different textures and flavors.

In a mixing bowl, combine the mashed bananas with the melted coconut oil and maple syrup. Mix until smooth.
Add in the almond flour, cocoa powder, baking powder, vanilla extract, and salt. Stir until just combined.
If you’d like to include some extra chocolaty goodness, fold in the vegan chocolate chips now.
Pour the brownie batter into the prepared baking pan and spread it evenly.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool for a few minutes before cutting into squares and serving.

Best ways to enjoy it

These Chocolate Vegan Banana Brownies are perfect on their own, but they also pair wonderfully with certain toppings. Consider serving them warm with a scoop of vegan ice cream for an indulgent dessert or drizzled with a bit of almond butter for an extra nutritious kick. Each serving can be garnished with chopped nuts or fresh fruit for added texture and flavor.

How to store

To keep your brownies fresh, store them in an airtight container at room temperature for up to three days. If you want to keep them longer, you can freeze them for up to three months. Just make sure they are well-wrapped. When ready to enjoy, let them thaw at room temperature or pop them into the microwave for a few seconds to warm up.

Tips to make

Use ripe bananas: The riper, the better! They add natural sweetness and moisture.
Don’t overmix: Mixing just until combined can help keep the brownies tender and fudgy.
Customize: Swap almond flour for other gluten-free options or use any vegetable oil in place of coconut oil if needed.

Variations

Feel free to experiment with different flavors and textures. You can add a pinch of sea salt on top before baking for a delightful chocolate-meets-salty experience. Alternatively, you could incorporate nuts like walnuts or pecans. If you’re a fan of peanut butter or almond butter, consider swirling it into the batter for a rich, nutty flavor. You could also explore making these brownies with different types of sweeteners or a combination of flours like oat flour.

Frequently Asked Questions

1. Can I use a different type of flour?

Yes, while almond flour works great, you can use whole wheat flour or all-purpose flour as alternatives. Just note that this may change the texture of the brownies.

2. How do I know when the brownies are done?

Insert a toothpick into the center; if it comes out clean or with just a few moist crumbs, the brownies are ready to be taken out of the oven.

3. What is the best way to store leftovers?

Store them in an airtight container at room temperature for up to three days. For longer storage, freeze them and thaw when ready to eat.
