Preparation
Preheat your oven to 350°F (175°C) and grease or line an 8×8 inch baking pan with parchment paper.
In a mixing bowl, combine the mashed bananas with the melted coconut oil and maple syrup. Mix until smooth.
Add in the almond flour, cocoa powder, baking powder, vanilla extract, and salt. Stir until just combined.
If desired, fold in the vegan chocolate chips.
Pour the brownie batter into the prepared baking pan and spread it evenly.
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool for a few minutes before cutting into squares and serving.
Notes
These brownies can be served warm with vegan ice cream or drizzled with almond butter. Store in an airtight container at room temperature for up to three days, or freeze for longer storage.
