  • 1 cup unsalted butter (230g)

  • 5 Tbsp rum (or water)

  • 1 cup brown sugar (200g)

  • 2 cups hazelnut meal (or almond meal) (240g)

  • 1 cup whole hazelnuts, finely chopped (160g)

  • 1 cup chopped dark chocolate


Directions:



  1. Preheat oven to 350°F (180°C) and grease and flour a rimmed 18×13-inch (46×33 cm) baking sheet.

  2. Combine flour, baking powder, salt, sugar, vanilla extract, eggs, and butter in a stand mixer. Press the dough into the baking sheet and pierce with a fork.

  3. Spread apricot jam over the dough.

  4. Melt butter with rum, sugar, and vanilla. Mix in ground and chopped nuts. Spread over the jam.

  5. Bake for 30 minutes.

  6. Let the bars cool overnight before cutting into small triangles.
