Ingredients
  

Crust

  • 2 1/2 cups all-purpose flour 300g
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/2 cup sugar 100g
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup unsalted butter, room temperature 115g

Filling

  • 1 cup unsalted butter 230g
  • 5 Tbsp rum (or water)
  • 1 cup brown sugar 200g
  • 1 tsp vanilla extract
  • 2 cups hazelnut meal (or almond meal) 240g
  • 1 cup whole hazelnuts, finely chopped 160g

Topping

  • 1 cup chopped dark chocolate

Instructions
 

How to Make Nut Corners

  • Preheat oven to 350°F (180°C) and grease and flour a rimmed 18×13-inch (46×33 cm) baking sheet.
  • Combine flour, baking powder, salt, sugar, vanilla extract, eggs, and butter in a stand mixer. Press the dough into the baking sheet and pierce with a fork.
  • Spread apricot jam over the dough.
  • Melt butter with rum, sugar, and vanilla. Mix in ground and chopped nuts. Spread over the jam.
  • Bake for 30 minutes.
  • Let the bars cool overnight before cutting into small triangles.
  • Dip the tips into melted chocolate and allow to set.

Notes

These nut corners are best enjoyed with a hot cup of coffee or tea.
