Preparation
Preheat your air fryer according to the manufacturer’s instructions.
Slice the zucchini into fry shapes, ensuring they’re even for consistent cooking.
Set up a breading station with three bowls: one for flour, one for beaten eggs, and one containing a mixture of panko, Italian bread crumbs, parmesan cheese, salt, and pepper.
Breading and Cooking
Dip each zucchini fry into the flour, followed by the egg mixture, and finally into the breadcrumb mixture to coat thoroughly.
Arrange the coated zucchini fries in the air fryer basket in a single layer.
Lightly spray the fries with olive oil to enhance crispiness.
Cook in the air fryer at 400°F for about 10-12 minutes, flipping halfway through until they are golden brown and crispy.
Making the Aioli
In a bowl, mix together mayonnaise, minced garlic, lemon juice, lemon zest, minced tarragon, and salt.
Serving
Serve the zucchini fries hot with the aioli for dipping.
Notes
To keep leftovers fresh, store them in an airtight container in the refrigerator for up to three days. Reheat in the air fryer for 2-3 minutes to restore crispness.
