Ingredients

For the Zucchini Sticks

  • 2 medium zucchinis
  • 1 cup breadcrumbs Consider varying the type for different flavors.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 large egg (beaten)
  • as needed cooking spray

Instructions

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Cut the zucchinis into sticks.
  • In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • Dip each zucchini stick into the beaten egg, then coat it with the breadcrumb mixture.
  • Spray the air fryer basket with cooking spray and place the zucchini sticks in a single layer.
  • Spray the tops of the zucchini sticks with more cooking spray.

Cooking

  • Cook in the air fryer for 10-12 minutes until golden and crispy.
  • Serve hot as a snack or side dish.

Notes

For extra crunch, let the zucchini sticks sit in the egg mixture for a few minutes before breading. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer to restore crispiness.
