Instructions
Preparation
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or similar.
Slice the peaches and place them in a bowl. Add maple syrup and cinnamon; toss to coat.
Let the peaches sit for 5–10 minutes to macerate.
Topping
In a separate bowl, combine almond flour, melted coconut oil, salt, and vanilla. Mix until crumbly.
Assembly and Baking
Pour the peach mixture into the prepared baking dish in an even layer.
Scatter and gently press the almond flour topping over the peaches.
Bake for 30–35 minutes, or until the topping is golden and the peaches are bubbling.
Remove from oven and let cool for 10 minutes before serving.
Notes
