Ingredients

Peach Filling

  • 4-5 medium Fresh peaches Ripe but still firm.
  • 1-2 tablespoons Maple syrup Adjust according to sweetness preference.
  • 1 teaspoon Ground cinnamon Warming complement to peaches.

Cobbler Topping

  • 2 cups Almond flour Finely ground for best texture.
  • 3 tablespoons Melted coconut oil Can substitute with vegan butter.
  • 1/8 teaspoon Salt A pinch to brighten flavors.
  • 1/2 teaspoon Vanilla extract Splash for depth of flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or similar.
  • Slice the peaches and place them in a bowl. Add maple syrup and cinnamon; toss to coat.
  • Let the peaches sit for 5–10 minutes to macerate.

Topping

  • In a separate bowl, combine almond flour, melted coconut oil, salt, and vanilla. Mix until crumbly.

Assembly and Baking

  • Pour the peach mixture into the prepared baking dish in an even layer.
  • Scatter and gently press the almond flour topping over the peaches.
  • Bake for 30–35 minutes, or until the topping is golden and the peaches are bubbling.
  • Remove from oven and let cool for 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream, whipped cream, or toasted almonds. Store leftovers in an airtight container for up to 4 days. To reheat, warm portions in microwave or oven.
