Ingredients

Vegetables

  • 2 leeks, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 cup peas

Protein

  • 2 chicken breasts, diced

Liquids

  • 6 cups chicken broth
  • 1 can coconut milk

Spices

  • 1 tablespoon turmeric powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add leeks and onion, sauté until translucent.
  • Add carrots and celery, cooking for another 5 minutes until they start to soften.
  • Stir in the turmeric and ginger, and cook for 1 minute until fragrant.
  • Add the diced chicken and cook until browned on all sides.
  • Pour in the chicken broth, bringing the mixture to a boil.
  • Reduce heat, add peas and coconut milk, and let simmer for 15-20 minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, enjoying the warmth and nourishment of this delightful soup.

Notes

To enhance the flavor, consider adding garlic along with the vegetables. For a vegan version, substitute chicken with chickpeas or tofu and use vegetable broth instead of chicken broth. Experiment with different greens, such as spinach or kale, to increase the nutritional value.
