Instructions
Preparation
Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a large bowl, beat together the softened butter and granulated sugar until fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in the apple cider.
In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fill each cupcake liner about 2/3 full with the batter.
Baking
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool completely.
Frosting
For the frosting, beat together the softened butter, powdered sugar, vanilla extract, and cinnamon until smooth.
Frost the cooled cupcakes with the spiced buttercream.
Notes
Best served at room temperature. Garnish with a sprinkle of cinnamon or a thin slice of apple for a fancy touch. Store in an airtight container.
