Ingredients

Muffin Batter

  • 1 cup Greek yogurt Use room temperature for better mixing
  • 1 cup apple sauce
  • 2 large eggs Room temperature
  • 1 cup whole wheat flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 cup honey or maple syrup Adjust sweetness as preferred
  • 1/2 cup diced apples Fresh apples

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine Greek yogurt, apple sauce, eggs, and honey or maple syrup, mixing well until smooth.
  • In another bowl, mix the whole wheat flour, oats, baking powder, baking soda, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the diced apples until evenly distributed in the batter.
  • Pour the batter into a lined muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool before serving.

Notes

These muffins can be enjoyed on their own or with almond butter or cream cheese. Store in an airtight container for up to three days, or freeze for up to three months.
