Preparation
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine Greek yogurt, apple sauce, eggs, and honey or maple syrup, mixing well until smooth.
In another bowl, mix the whole wheat flour, oats, baking powder, baking soda, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the diced apples until evenly distributed in the batter.
Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
Baking
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let cool before serving.
