Ingredients

Wet Ingredients

  • 1 cup Greek yogurt Ensure it's at room temperature
  • 1/2 cup applesauce
  • 1/2 cup brown sugar Adjust sweetness to taste
  • 2 large eggs Add one at a time

Dry Ingredients

  • 1 cup whole wheat flour Can substitute with gluten-free flour blend
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Add more for extra flavor
  • 1/2 teaspoon salt

Add-Ins

  • 1 medium apple, diced Use a mix of sweet and tart apples for depth

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, mix the Greek yogurt, applesauce, and brown sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the diced apple.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins can be served warm or at room temperature. Consider adding almond butter or cream cheese for an enhanced taste. Store in an airtight container for up to three days or freeze for up to three months.
