Instructions
Preparation
Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract and sour cream.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the diced apples and pour the batter into the prepared pan.
Crumb Topping
To prepare the crumb topping, combine the brown sugar, flour, melted butter, and cinnamon in a bowl until crumbly. Sprinkle it evenly over the cake batter.
Baking
Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
Drizzle
For the drizzle, whisk together the powdered sugar, apple juice, and cinnamon until smooth, then drizzle it over the cooled cake before serving.
Notes
Serve warm or at room temperature. Pair with vanilla ice cream or whipped cream for an extra indulgent treat. Can be garnished with cinnamon sticks or extra apple slices.
