For the cake

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup sour cream
  • 2 medium apples, peeled and diced

For the crumb topping

  • 0.5 cup brown sugar
  • 0.33 cup all-purpose flour
  • 0.25 cup unsalted butter, melted
  • 0.5 teaspoon ground cinnamon

For the drizzle

  • 0.5 cup powdered sugar
  • 2 tablespoons apple juice
  • 0.25 teaspoon ground cinnamon

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract and sour cream.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the diced apples and pour the batter into the prepared pan.

Crumb Topping

  • To prepare the crumb topping, combine the brown sugar, flour, melted butter, and cinnamon in a bowl until crumbly. Sprinkle it evenly over the cake batter.

Baking

  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.

Drizzle

  • For the drizzle, whisk together the powdered sugar, apple juice, and cinnamon until smooth, then drizzle it over the cooled cake before serving.

Notes

Serve warm or at room temperature. Pair with vanilla ice cream or whipped cream for an extra indulgent treat. Can be garnished with cinnamon sticks or extra apple slices.
