Use firm, crisp cucumbers.

apples, diced (preferably sweet varieties)
Consider using Fuji or Gala apples.

Dressing Ingredients

yogurt or sour cream
For a vegan option, substitute with a plant-based alternative.

Instructions
Preparation
In a large bowl, combine the diced cucumbers, apples, and red onion.
In a small bowl, mix together the yogurt (or sour cream), honey, lemon juice, and chopped mint to make the dressing.
Pour the dressing over the salad ingredients and toss gently to combine.
Season with salt and pepper to taste.
Chill for 30 minutes before serving to allow the flavors to meld.
Notes
Best served chilled. Garnish with additional mint leaves or extra diced apples. Can be stored in the refrigerator for up to 2 days.
