  • 2 cups rolled oats
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar Can increase for sweeter bars
  • 1/2 cup unsalted butter, melted
  • 1 large egg Can be substituted for a flax egg for vegan option
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples Use a variety of apples for depth of flavor
  • 1 tablespoon lemon juice To prevent apples from browning
  • 1/4 cup chopped nuts (optional) Such as walnuts or pecans

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  • In a large bowl, combine the oats, flour, baking powder, cinnamon, salt, and brown sugar.
  • In another bowl, mix the melted butter, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Gently fold in the diced apples and lemon juice, and nuts if using.
  • Spread the mixture evenly into the prepared baking pan.

Baking

  • Bake for 25-30 minutes, or until golden brown and set.
  • Allow to cool before slicing into bars.

Notes

Store in an airtight container at room temperature for up to five days. For longer storage, refrigerate for up to a week or freeze for up to three months.
