Ingredients

Main Ingredients

  • 1 lb lean beef (flank steak or sirloin), thinly sliced against the grain Use flank steak or sirloin for best results.
  • 2 tablespoons vegetable oil or sesame oil Use sesame oil for extra flavor.
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, julienned or sliced into thin strips
  • 1 zucchini sliced
  • 1 cup snap peas or green beans, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated Add more if you love ginger.
  • to taste Salt and pepper
  • 3 tablespoons soy sauce Use low-sodium if preferred.
  • 2 tablespoons honey or brown sugar For a touch of sweetness.
  • 1 tablespoon rice vinegar Apple cider vinegar can be used as a substitute.
  • 1 tablespoon sesame oil For a rich, nutty flavor.
  • 1 teaspoon cornstarch To thicken the sauce.
  • 1/4 cup water To dilute the sauce and create the perfect consistency.
  • 1/2 teaspoon chili flakes Optional, for a bit of heat.
  • to taste Chopped green onions For garnish.
  • to taste Toasted sesame seeds For added texture and flavor.

Instructions

Preparation

  • Gather all ingredients. Slice the beef against the grain to ensure tenderness, and chop all vegetables into bite-sized pieces.

Make the Sweet Ginger Sauce

  • In a small bowl, combine soy sauce, honey or brown sugar, rice vinegar, sesame oil, cornstarch, and water. Whisk until smooth and set aside.

Cook the Beef

  • Heat vegetable or sesame oil in a large pan or wok over medium-high heat. Add the beef slices in a single layer and cook for about 2-3 minutes on each side until browned but not cooked through. Remove from the pan and set aside.

Cook the Vegetables

  • In the same pan, add a little more oil if needed and toss in the onion, bell peppers, carrot, zucchini, snap peas, garlic, and ginger. Stir-fry for about 4-5 minutes until the vegetables are crisp-tender.

Combine Beef and Vegetables with Sauce

  • Return the beef to the pan and pour the sweet ginger sauce over the top. Stir well to coat all ingredients and cook for an additional 2-3 minutes until the beef is cooked through and the sauce is thickened.

Garnish and Serve

  • Remove from heat, garnish with chopped green onions and toasted sesame seeds. Serve hot over steamed rice or noodles.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. To reheat, place in a pan over medium heat until warmed through, adding a splash of water if necessary to prevent drying out. Customize the vegetables based on availability, and use zoodles for a healthier option.
