  • 2 pieces chicken breasts
  • 1 cup fresh asparagus, trimmed
  • 1 cup mozzarella cheese, shredded

Seasoning

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sauté the asparagus for about 2-3 minutes until slightly tender.
  • Season the asparagus with garlic powder, salt, and pepper.
  • Slice a pocket into each chicken breast and stuff them with the sautéed asparagus and shredded mozzarella.
  • Season the outside of the chicken breasts with salt, pepper, and Italian seasoning.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
  • Allow to rest for a few minutes before serving.

Notes

For added flavor, marinate the chicken breasts in olive oil, lemon juice, and herbs for 30 minutes before stuffing them. Ensure that the asparagus is cut into bite-sized pieces. Use a meat thermometer to check the internal temperature of the chicken, which should reach 165°F (75°C) for safe consumption. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
