Ingredients

Fruits

  • 2 cups diced apples (Honeycrisp or Fuji) Use firm varieties for best texture.
  • 2 cups diced pears (Bosc or Anjou) Good choices for this salad.
  • 1 cup grapes, halved Seedless preferred, can use red or green.
  • 1 cup pomegranate seeds
  • 1 cup diced oranges (navel or blood orange) Diced to provide color.

Dressing

  • 1 tablespoon lemon juice, freshly squeezed Prevents browning of the apples.
  • 1 tablespoon honey or maple syrup Adjust to taste, swap for vegan option.

Garnish

  • to taste fresh mint leaves For aroma and color.

Instructions

Preparation

  • Wash all fruit thoroughly and pat dry to avoid a watery salad.
  • Core and dice apples and pears into similar-sized pieces.
  • Halve grapes and peel and dice oranges, removing seeds and excess membrane.
  • Combine all fruits in a large mixing bowl.
  • In a small bowl, whisk together lemon juice and honey or maple syrup until smooth.
  • Drizzle dressing over fruit and gently fold the salad to coat without overmixing.
  • Transfer to a serving bowl and garnish with fresh mint leaves.

Notes

Store in an airtight container for up to 2 days. Prepare fruit and keep dressing separate to maintain freshness. Not recommended to freeze.
