15oztuna in oil, drained and flaked (3 small cans)
1eachEnglish cucumber, sliced
2largeavocados, peeled, pitted & slicedYou can use 3 medium avocados as an alternative.
1small/mediumred onion, thinly sliced
1/4cupcilantro (about half of a small bunch)
Dressing
2Tbsplemon juice, freshly squeezed
2Tbspextra virgin olive oil
1tspsea salt (or to taste)
1/8tspblack pepper

Preparation
In a large salad bowl, combine the sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna, and 1/4 cup of cilantro.
Drizzle the salad ingredients with 2 Tbsp of lemon juice, 2 Tbsp of olive oil, 1 tsp of salt, and 1/8 tsp of black pepper (or season to taste).
Toss everything together until well combined and serve.
Notes
This salad is versatile and can be served on a bed of greens, stuffed into pita pockets, or enjoyed with crackers. Leftovers should be stored in an airtight container in the fridge and can be kept fresh with additional lemon juice.
