Avocado Tuna Salad

A quick, healthy, and delicious avocado tuna salad that's perfect for lunch, a side dish, or dinner.

Ingredients

Main Ingredients

  • 15 oz tuna in oil, drained and flaked (3 small cans)
  • 1 each English cucumber, sliced
  • 2 large avocados, peeled, pitted & sliced You can use 3 medium avocados as an alternative.
  • 1 small/medium red onion, thinly sliced
  • 1/4 cup cilantro (about half of a small bunch)

Dressing

  • 2 Tbsp lemon juice, freshly squeezed
  • 2 Tbsp extra virgin olive oil
  • 1 tsp sea salt (or to taste)
  • 1/8 tsp black pepper

Instructions

Preparation

  • In a large salad bowl, combine the sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna, and 1/4 cup of cilantro.
  • Drizzle the salad ingredients with 2 Tbsp of lemon juice, 2 Tbsp of olive oil, 1 tsp of salt, and 1/8 tsp of black pepper (or season to taste).
  • Toss everything together until well combined and serve.

Notes

This salad is versatile and can be served on a bed of greens, stuffed into pita pockets, or enjoyed with crackers. Leftovers should be stored in an airtight container in the fridge and can be kept fresh with additional lemon juice.
