  • 8-10 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil for sautéing
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional) for added heat
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half for a creamy texture
  • 2 cups shredded cheddar cheese (medium or sharp)

Preparation

  • Cook the bacon in a skillet until crispy. Once cooked, chop it into small pieces and set aside.
  • In a large pot, heat the butter or olive oil over medium heat. Add the diced onions and sliced carrots, sautéing until tender.
  • Pour in the chicken broth and bring the mixture to a simmer, allowing the flavors to meld together.
  • Stir in the heavy cream along with the salt, black pepper, garlic powder (or minced garlic), dried thyme, and red chili flakes if you are opting for a hint of spice. Keep stirring continuously to blend the flavors.
  • Add the gnocchi to the pot and let it cook for about 2 minutes, or until they are tender and soft.
  • Gently fold in the shredded cheddar cheese until it melts into the soup. Finally, incorporate the chopped bacon, adjust seasoning as needed, and serve hot.

Notes

Serve in bowls with extra bacon bits or herbs on top. Crusty bread is a great accompaniment. Consider adding a drizzle of olive oil or sour cream before serving.
