  • 2 cups broccoli florets (finely chopped) Steam until tender-crisp
  • 1 cup breadcrumbs For binding
  • 1.5 cups shredded cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 2 large eggs For binding
  • 2 tbsp all-purpose flour For binding

Seasoning

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste salt and pepper

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Steam the broccoli florets until they are tender-crisp, about 3-5 minutes. Allow to cool and finely chop.
  • In a large bowl, combine the chopped broccoli with breadcrumbs, shredded cheddar, grated Parmesan, eggs, and flour. Add garlic powder, onion powder, salt, and pepper, and mix well.
  • Roll small portions of the mixture into 1-inch balls and place on a parchment-lined or greased baking sheet.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown. Broil for an additional 1-2 minutes for extra crispiness, watching closely.
  • Allow to cool slightly before serving warm with marinara or ranch dip.

Notes

For best results, finely chop broccoli and use fresh breadcrumbs. Customize the flavor by adding red pepper flakes for heat or fresh herbs for aroma. To reduce calories, try using reduced-fat cheese.
