  • 1 cup cottage cheese
  • 6 large eggs
  • to taste Salt
  • to taste Pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded cheese (optional) Optional for added flavor and creaminess.
  • Chopped herbs (for garnish) Such as chives or parsley.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese, eggs, salt, pepper, garlic powder, and onion powder, whisking until well mixed.
  • If you’ve chosen to use shredded cheese, stir it in now.
  • Pour the mixture into a greased baking dish.
  • Bake for 25-30 minutes or until the eggs are set and lightly golden.
  • Once baked, remove it from the oven, let it cool a bit, and garnish with chopped herbs before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Can be reheated in the microwave or oven. For freezing, let it cool completely before transferring to a freezer-safe container.
