Ingredients

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is cold for tender biscuits.
  • 3/4 cup buttermilk Do not overwork the dough.

For the Filling

  • 1 pound roast beef, sliced
  • 8 slices provolone cheese

For Dipping

  • 2 cups beef broth

Instructions

Preparation

  • Preheat oven to 425°F (220°C).
  • In a bowl, mix flour, baking powder, and salt.
  • Cut in butter until the mixture resembles coarse crumbs.
  • Stir in buttermilk until just combined.
  • Roll out dough on a floured surface and cut into circles.

Assembly

  • Place roast beef and a slice of provolone in the center of half the circles.
  • Top with the remaining circles.

Baking

  • Transfer to a baking sheet and bake for 15-20 minutes until golden brown.
  • Heat beef broth in a pot.

Serving

  • Serve the biscuits warm with beef broth on the side for dipping.

Notes

To store leftovers, allow them to cool, then store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the oven or microwave before serving.
