Ingredients

For the coating

  • 1/4 teaspoon salt
  • 1 large egg beaten
  • 3/4 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Ground black pepper to taste

For the zucchini fries

  • 1 pound zucchini cut into 1/2-inch sticks
  • Cooking spray or oil for greasing the baking sheet

Instructions

Preparation

  • Preheat the oven to 425°F and prepare a baking sheet with cooking spray or oil.
  • In a shallow dish, mix your flour with garlic powder and salt, while beating the egg in another dish.
  • Combine breadcrumbs, Parmesan cheese, and Italian seasoning in a third dish.
  • Coat your zucchini sticks first in the flour mixture, then in the egg, and finally in the breadcrumb mix.

Baking

  • Place the coated zucchini fries onto the prepared baking sheet.
  • Bake for about 20 minutes, flipping halfway, until golden brown and crispy.

Serving

  • Serve immediately with your favorite dips, such as marinara or ranch.

Notes

These fries can be stored in the refrigerator for up to three days. Reheat in the oven at 350°F for 10-15 minutes to restore crispiness. For a spicy twist, consider adding cayenne pepper or substituting panko breadcrumbs.
