Instructions
Preparation
Preheat your oven to 350°F (177°C) and spray the cavities of a 12-count muffin pan with nonstick cooking spray.
In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk the mashed banana, milk, honey, egg, and vanilla extract until fully mixed.
Baking
Add the dry ingredients into the wet ingredients and stir until well combined.
Evenly distribute the mixture between the 12 muffin cavities.
Bake for 20-25 minutes or until the tops are set and firm.
Allow the oatmeal cups to cool for 10 minutes in the muffin pan before transferring them to a wire rack to cool completely.
Notes
These cups can be enjoyed plain or with toppings like fresh berries, Greek yogurt, nut butter, or chopped nuts.
