Ingredients

  • 2 1/4 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup mashed banana Use overripe bananas for sweetness.
  • 3/4 cup milk
  • 1/4 cup honey Can be substituted with maple syrup.
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (177°C) and spray the cavities of a 12-count muffin pan with nonstick cooking spray.
  • In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk the mashed banana, milk, honey, egg, and vanilla extract until fully mixed.

Baking

  • Add the dry ingredients into the wet ingredients and stir until well combined.
  • Evenly distribute the mixture between the 12 muffin cavities.
  • Bake for 20-25 minutes or until the tops are set and firm.
  • Allow the oatmeal cups to cool for 10 minutes in the muffin pan before transferring them to a wire rack to cool completely.
