Banana Cake with Cream Cheese Frosting

Ingredients

For the Cake

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 2 tablespoons canola oil
  • 3/4 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups mashed ripe bananas (about 4 large bananas)
  • 1/4 cup milk

For the Frosting

  • 4 ounces cream cheese (at room temperature)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar
  • 2 tablespoons chopped toasted nuts (optional)

Instructions

Making the Cake

  • Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, beat the softened butter, canola oil, and granulated sugar together until light and fluffy.
  • Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan before frosting.

Making the Frosting

  • In a medium bowl, beat the cream cheese and 1/2 teaspoon of vanilla extract until smooth.
  • Gradually add the confectioners’ sugar, mixing until the frosting is creamy and well combined.

Notes

Ensure your bananas are overripe for the best flavor. Customize with chocolate chips or nuts for added texture.
