Ingredients

Dry Ingredients

  • 2 cups almond flour
  • 4 tbsp vanilla protein powder
  • 3 tsp chia seeds (or basil seeds)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt

Wet Ingredients

  • 1 ripe banana Ensure banana is very ripe for maximum sweetness.
  • 1/2 tsp vanilla extract
  • 4 large eggs Pasture raised if possible.
  • 2/3 cup milk of choice Add more if batter is too thick.
  • Coconut oil or ghee For cooking.

Preparation

  • In a medium-sized bowl, combine almond flour, protein powder, chia seeds, cinnamon, and salt. Mix thoroughly using a whisk or a fork.
  • Peel and smash the ripe banana into the dry mixture using the back of a fork until well blended.
  • Add vanilla, eggs, and milk of choice. Continue mixing until combined; if the batter is too thick, add more milk until you reach your desired consistency.

Cooking

  • Heat a griddle over medium heat and lightly grease with coconut oil or ghee.
  • Pour the desired amount of batter onto the griddle and cook until bubbles form on the surface. Flip and cook until golden brown on both sides.

Notes

These pancakes are best served with toppings like maple syrup or yogurt. For added flavor, consider fresh berries, chopped nuts, or a dollop of cranberry sauce.
