  • 2 cups rolled oats
  • 1 ripe banana, mashed Use overripe bananas for added sweetness.
  • 1/2 cup peanut butter Can substitute with almond or cashew butter.
  • 2 tbsp maple syrup or honey Optional; can substitute with agave syrup for a vegan option.
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, mashed banana, peanut butter, maple syrup or honey, vanilla extract, and cinnamon. Mix well until all ingredients are fully incorporated.
  • Line an 8×8 inch baking dish with parchment paper, leaving some excess to hang over the sides for easy removal.
  • Pour the mixture into the prepared baking dish, spreading it evenly.

Baking

  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Allow to cool in the pan for about 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack.
  • Cut into bars and enjoy!

Notes

These bars can be enjoyed on their own or enhanced with extra peanut butter or chocolate chips. Store them in an airtight container at room temperature for up to a week, or freeze for longer storage.
