3/4cupwarm water
1.5tspactive dry yeast

2cupsall-purpose flour

1/3cupbarbecue sauce
1.5cupsyour favorite cheese (mozzarella and Colby Jack recommended)
1cupcooked chicken breast, cubedToss in barbecue sauce for flavor.
1/4red onion, diced

Instructions
Make the Dough
Measure warm water into a medium mixing bowl. Add the yeast and sugar; stir gently with a whisk and let sit for 5 minutes.
Stir in the flour, olive oil, and salt, forming a shaggy dough.
Knead the dough on a lightly floured counter for a few minutes until smooth. Form into a ball and place in a bowl sprayed with cooking spray.
Cover with a kitchen towel and let rise for 40-45 minutes.
Assemble
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
Gently punch down the risen dough and press it out until it's about 1/4" thick. Transfer it to the lined pan.
Spread the barbecue sauce evenly on the pizza crust and sprinkle cheese over it, reserving some for later.
Evenly distribute the chicken breast, red onion, and green pepper over the pizza, and add a little more cheese on top.
Bake
Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted.
Top with fresh cilantro, if desired, and enjoy immediately.

Store leftovers tightly covered in the fridge for up to 3 days.
Notes
For extra fluffiness, let the dough rise longer. Experiment with different cheese types or add jalapeños for tanginess. Rotisserie chicken is a great time-saver!
