BBQ Chicken Pizza

A flavorful BBQ Chicken Pizza loaded with tangy barbecue sauce, tender chicken, and melting cheese on a crispy crust, perfect for any occasion.

Ingredients

For the pizza

  • 1 piece homemade or store-bought pizza dough
  • 2 tablespoons extra virgin olive oil plus extra for drizzle
  • 2-3 pieces chicken cutlets amount can vary based on preference
  • 1 cup BBQ sauce (use more if desired, Sweet Baby Ray's recommended)
  • 1/2 piece red onion, thinly sliced
  • 2 cups mozzarella, grated
  • 1/2 cup gouda, grated
  • 1-2 tablespoons fresh cilantro leaves, roughly chopped
  • as desired fresh ground black pepper

Instructions

Preparation

  • Preheat oven to 425°F.
  • Marinate chicken in 1/2 cup BBQ sauce for 25-30 minutes.
  • Roll pizza dough into a 12" circle and place in refrigerator to chill.
  • Drizzle a little olive oil into a skillet and cook chicken over medium-high heat until no longer pink, about 7-10 minutes.
  • Remove from heat, let cool, and slice chicken into bite-size pieces.

Assembly

  • Remove pizza dough from fridge, brush with olive oil, and spread remaining BBQ sauce, leaving edges sauce-free.
  • Sprinkle 1 1/2 cups of the mozzarella and 1/4 cup of the gouda all over the pizza, leaving edges clean.
  • Top with sliced chicken and red onion, then sprinkle with remaining cheese.

Baking

  • Place pizza on a round pan or baking sheet and bake in the oven for 15 minutes, until cheese is melted and crust is golden.
  • Remove from oven, top with cilantro and pepper, and serve immediately.

Notes

For extra flavor, marinate the chicken overnight. Experiment with different cheeses to add a spicy kick. Leave edges of pizza dough without sauce for a better crust.
