Marinate chicken in 1/2 cup BBQ sauce for 25-30 minutes.
Roll pizza dough into a 12" circle and place in refrigerator to chill.
Drizzle a little olive oil into a skillet and cook chicken over medium-high heat until no longer pink, about 7-10 minutes.
Remove from heat, let cool, and slice chicken into bite-size pieces.
Assembly
Remove pizza dough from fridge, brush with olive oil, and spread remaining BBQ sauce, leaving edges sauce-free.
Sprinkle 1 1/2 cups of the mozzarella and 1/4 cup of the gouda all over the pizza, leaving edges clean.
Top with sliced chicken and red onion, then sprinkle with remaining cheese.
Baking
Place pizza on a round pan or baking sheet and bake in the oven for 15 minutes, until cheese is melted and crust is golden.
Remove from oven, top with cilantro and pepper, and serve immediately.
Notes
For extra flavor, marinate the chicken overnight. Experiment with different cheeses to add a spicy kick. Leave edges of pizza dough without sauce for a better crust.
