Ingredients

For the potatoes

  • 4 large russet potatoes Choose uniform sizes for even cooking.

  • 1 cup BBQ sauce Use your favorite brand.
  • 1 cup shredded cheddar cheese Can swap with pepper jack or mozzarella for different flavor.
  • 1/2 cup sour cream Optional for serving.
  • 1/4 cup chopped green onions For topping.
  • 1 tablespoon olive oil For rubbing on potatoes.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse and scrub the russet potatoes under cold water. Pat dry and pierce each potato several times with a fork to allow steam to escape.
  • Rub each potato with olive oil and sprinkle with salt.

Baking the Potatoes

  • Place the potatoes directly on the oven rack or on a baking sheet and bake for approximately 45-50 minutes, or until tender when pierced with a fork.

Preparing the Filling

  • While the potatoes bake, mix the shredded cooked chicken with BBQ sauce in a medium bowl. Stir until the chicken is well coated.

Assembling the Stuffed Potatoes

  • Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
  • Carefully slice open the top of each potato lengthwise, ensuring not to cut all the way through.
  • Use a fork to fluff the insides of each potato gently, creating space for the filling.
  • Spoon the BBQ chicken mixture generously into each potato.
  • Top each stuffed potato with a handful of shredded cheddar cheese.
  • Place the stuffed potatoes back in the oven for an additional 5-10 minutes, or until the cheese melts.

Serving

  • Remove from the oven and garnish with sour cream and chopped green onions. Serve warm and enjoy!
