Ingredients

For the BBQ Chicken

  • 4 pieces boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (store-bought or homemade) Choose your preferred flavor
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • to taste Salt and pepper

For the Roasted Potatoes

  • 4 medium potatoes, cut into cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary
  • to taste Salt and pepper

For the Steamed Broccoli

  • 1 large head broccoli, cut into florets
  • 1 tbsp butter
  • to taste Salt and pepper

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) or preheat your grill if using.
  • Rub the chicken breasts with olive oil, then season them with garlic powder, onion powder, paprika, salt, and pepper.
  • Brush the chicken with BBQ sauce and let marinate for at least 15-30 minutes.

Cooking

  • Toss the cubed potatoes in a bowl with olive oil, garlic powder, rosemary, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  • For the oven method, place the marinated chicken on a baking sheet and bake for 20-25 minutes, or until fully cooked (internal temperature of 165°F).
  • If grilling, cook the chicken for about 6-8 minutes on each side until thoroughly cooked.
  • While the chicken and potatoes are cooking, steam the broccoli florets for about 5-7 minutes until tender yet bright green.
  • Toss the steamed broccoli with butter, salt, and pepper.

Serving

  • Plate the BBQ chicken alongside the roasted potatoes and steamed broccoli.
  • Consider garnishing with fresh parsley or extra BBQ sauce.

Notes

For extra crispy potatoes, soak them in water for about 30 minutes prior to roasting. Marinating the chicken longer enhances flavor.
