  • 1 lb lean ground beef
  • 1 large yellow onion (chopped)
  • 4 carrots (peeled and chopped)
  • 3 stalks celery (chopped)
  • 1 tbsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1/2 cup sliced white button mushrooms (about 4oz.)
  • 1 tsp dried thyme
  • 8 cups beef broth
  • 2 bay leaves
  • 1 cup medium barley
  • 1/2 cup frozen peas
  • Salt and pepper to taste

How to Make Beef and Barley Soup

  • Brown the lean ground beef seasoned with salt and pepper in a large pot or Dutch oven.
  • Add the onion, carrots, celery, Worcestershire sauce, and garlic. Saute for 10 minutes.
  • Pour in the beef broth, add thyme, bay leaves, and mushrooms. Simmer covered for 30 minutes.
  • Add barley, cover, and simmer for another 30 minutes.
  • Season with salt and pepper, add peas, and cook for 10 more minutes. Remove bay leaves before serving hot.

Notes

This soup gets even better the next day as the flavors meld together. Feel free to customize with your favorite vegetables.
