How to Make Beef and Barley Soup
Brown the lean ground beef seasoned with salt and pepper in a large pot or Dutch oven.
Add the onion, carrots, celery, Worcestershire sauce, and garlic. Saute for 10 minutes.
Pour in the beef broth, add thyme, bay leaves, and mushrooms. Simmer covered for 30 minutes.
Add barley, cover, and simmer for another 30 minutes.
