  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef Use high-quality beef for best flavor.
  • 1 small onion, diced
  • 4 cloves garlic, minced Fresh minced garlic is essential for flavor.
  • 1/2 cup milk
  • 1 cup shredded cheddar Can substitute with other cheeses if desired.
  • 1/2 cup Parmesan, grated Alternatively use mozzarella or gouda.
  • 3 cups beef broth, low sodium
  • to taste Salt and pepper
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • 2 tbsp fresh parsley, chopped Optional for garnish.

Instructions

Cooking

  • Melt 1 tablespoon of butter in a big skillet over medium heat. Add the chopped onion and sauté for 3 to 4 minutes until it softens.
  • Add the ground beef to the skillet. Cook it while breaking it apart until it changes color. If there's excess fat, drain it out.
  • Stir in the minced garlic and cook for about a minute until the aroma is noticeable.
  • Pour in the uncooked rice, beef broth, Italian seasoning, pepper, and salt. Stir to combine all ingredients.
  • Raise the heat to bring the mixture to a boil, then reduce it to low. Cover the skillet and let it simmer for 18 to 20 minutes until the rice has absorbed the broth and is tender.
  • In a small saucepan, melt 2 more tablespoons of butter over low heat. Stir in Parmesan, cheddar, and milk, mixing until creamy and smooth.
  • Pour the cheese sauce into the skillet with the cooked beef and rice. Stir until all components are well combined.
  • Continue cooking uncovered for a few more minutes to meld the flavors together. If desired, sprinkle with chopped parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for 2-3 months. Reheat with a splash of beef broth or milk for best results.
