Melt 1 tablespoon of butter in a big skillet over medium heat. Add the chopped onion and sauté for 3 to 4 minutes until it softens.
Add the ground beef to the skillet. Cook it while breaking it apart until it changes color. If there's excess fat, drain it out.
Stir in the minced garlic and cook for about a minute until the aroma is noticeable.
Pour in the uncooked rice, beef broth, Italian seasoning, pepper, and salt. Stir to combine all ingredients.
Raise the heat to bring the mixture to a boil, then reduce it to low. Cover the skillet and let it simmer for 18 to 20 minutes until the rice has absorbed the broth and is tender.
In a small saucepan, melt 2 more tablespoons of butter over low heat. Stir in Parmesan, cheddar, and milk, mixing until creamy and smooth.
Pour the cheese sauce into the skillet with the cooked beef and rice. Stir until all components are well combined.
Continue cooking uncovered for a few more minutes to meld the flavors together. If desired, sprinkle with chopped parsley and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for 2-3 months. Reheat with a splash of beef broth or milk for best results.
