Ingredients
  

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Berry Swirl

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat the oven, line a muffin tin, mix graham cracker crumbs, sugar, and melted butter, press into liners, bake briefly, then set aside to cool.
  • Cook mixed berries, sugar, and lemon juice until thickened, cool, then blend until smooth.
  • Beat cream cheese until smooth, add sugar, eggs, vanilla extract, and lemon juice, mix well.
  • Divide cheesecake filling into liners, add berry puree, swirl gently for a marbled effect.
  • Bake, let cool, then refrigerate for at least 2 hours before serving.
