Ingredients

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs

Mix-ins

  • 1 cup butterscotch chips
  • 1 cup chocolate chips

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a bowl, whisk together the flour, baking soda, and salt.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract until well combined.
  • Gradually mix in the dry ingredients until just combined. Fold in the butterscotch and chocolate chips.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them apart.

Baking

  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow to cool slightly before transferring them to wire racks.

Notes

These cookies can be served warm or paired with ice cream for a delicious cookie sandwich. Store in an airtight container for up to a week, or freeze the dough for later use.
