(corn starch can be substituted)

Instructions
Cook bacon until crispy in a soup pot.
Sauté onion, celery, and carrot in bacon fat.
Add potatoes, salt, pepper, and seasonings, cook for a few minutes.
Pour in broth and simmer until potatoes soften.
Whisk together flour (or corn starch) and milk, add to pot to thicken.
Optionally blend a portion of the soup for a creamier texture.
Combine blended soup back into the pot.
Stir in crumbled bacon and garnish with parsley, additional bacon, and cheese when serving.
