  • 6 medium Russet potatoes cut into bite-size pieces
  • 1 onion diced
  • 3 carrots peeled and sliced
  • 3 stalks celery diced
  • 6 slices bacon cooked and crumbled
  • 8 cups vegetable broth or chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 tsp minced parsley
  • Salt and pepper to taste
  • 3 tbsp flour (corn starch can be substituted)
  • 1 cup finely grated cheese of your choice

Instructions
 

  • Cook bacon until crispy in a soup pot.
  • Sauté onion, celery, and carrot in bacon fat.
  • Add potatoes, salt, pepper, and seasonings, cook for a few minutes.
  • Pour in broth and simmer until potatoes soften.
  • Whisk together flour (or corn starch) and milk, add to pot to thicken.
  • Optionally blend a portion of the soup for a creamier texture.
  • Combine blended soup back into the pot.
  • Stir in crumbled bacon and garnish with parsley, additional bacon, and cheese when serving.
