Preparation

  • In another bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract until smooth.
  • Carefully combine the wet and dry ingredients, mixing just until incorporated. A few lumps are okay—overmixing can lead to tough pancakes.

Cooking

  • Heat a skillet or griddle over medium heat and lightly grease it with butter or oil.
  • For each pancake, pour about 1/4 cup of the batter onto the skillet.
  • Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown.
