These mini cheese balls are quick to assemble, budget-friendly, and perfect for party snacking, featuring a creamy cheese mixture rolled in various coatings for additional flavor and texture.

Ingredients

Cheese Mixture

  • 8 oz cream cheese, softened Room temperature is best for easy mixing; low-fat will be softer and looser.
  • 1 cup shredded sharp cheddar cheese Freshly shredded melts and blends better than pre-shredded.
  • 1 tbsp smoked paprika Adds signature smoked depth.
  • 2 tbsp chopped fresh chives Plus extra for garnish.
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt Adjust to taste.

Coatings & Serving

  • Assorted coatings Chopped pecans, bacon bits, dried cranberries, fresh herbs, everything bagel seasoning.
  • Pretzel sticks Optional, for serving or as handles.

Instructions

Preparation

  • Put softened cream cheese and shredded cheddar in a mixing bowl. Add smoked paprika, chives, garlic powder, onion powder, and salt.
  • Beat with a hand mixer or stir vigorously with a spoon until fully combined and spreadable. Scrape the bowl sides once or twice.
  • Cover the bowl and refrigerate for 20–30 minutes to firm up.
  • Use a teaspoon or small melon baller to scoop consistent amounts of the mixture.
  • Roll each scoop gently between your palms to form neat 1-inch balls.
  • Roll each ball in your choice of coating, pressing lightly so the coating adheres. Place on a tray.
  • Refrigerate the coated bites for at least 30 minutes to set.
  • Arrange on a platter. Insert a pretzel stick in each if desired.
