  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 piece sausage (smoked or your choice, sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt and pepper to taste
  • Olive oil for sautéing

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened.
  • Add the sausage and cook until browned.
  • Stir in the black beans, rice, cumin, paprika, salt, and pepper.
  • Pour in the broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
  • Fluff with a fork and serve hot.

Notes

To store leftovers, allow the dish to cool completely and transfer it to an airtight container. It can be refrigerated for up to 3-4 days. For longer storage, consider freezing portions in airtight containers or freezer bags for up to 3 months. When ready to eat, thaw in the refrigerator overnight and reheat in the microwave or on the stovetop.
