  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh cilantro for garnish (optional)

Instructions

Cooking

  • In a large pot, cook the sausage over medium heat until browned.
  • Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are tender.
  • Stir in the cooked black beans, rice, cumin, paprika, salt, and pepper.
  • Pour in the broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked.
  • Fluff with a fork and garnish with fresh cilantro before serving.

Notes

This dish is best served warm right after cooking. For an extra kick, consider serving with hot sauce or lime wedges. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days or frozen for up to three months. For additional flavor, try using smoked sausage and consider adjusting the spice level with jalapeños or cayenne pepper.
