Black Pepper Chicken Stir-Fry with Onions & Rice

Ingredients

For the chicken marinade

  • 1 lb chicken breast or thighs, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp ground black pepper

For the stir-fry

  • 2 tbsp vegetable oil (or sesame oil)
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional) Optional but adds flavor
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 2 tsp freshly ground black pepper
  • 1/4 cup chicken broth or water
  • to taste Salt

For serving

  • Steamed white rice or jasmine rice
  • Fresh cilantro or green onions for garnish (optional)

Instructions

Preparation

  • Marinate the chicken by combining it with soy sauce, cornstarch, sesame oil, and ground black pepper in a bowl. Let it sit for 10-15 minutes.

Cooking

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Stir-fry the marinated chicken for 5-7 minutes until cooked through and lightly browned. Remove and set aside.
  • In the same pan, add the remaining oil and sauté the sliced onions for 3-4 minutes until softened. Add the minced garlic and cook for another minute.
  • Pour in the soy sauce, oyster sauce (if using), rice vinegar, honey, and chicken broth, stirring to combine. Let it simmer for 2-3 minutes.
  • Return the chicken to the pan, combine with the sauce and onions, and simmer for another 2-3 minutes.

Serving

  • Serve over steamed rice and garnish with cilantro or green onions.

Notes

For a spicier kick, add sliced fresh chili peppers or a sprinkle of red pepper flakes. Experiment with different vegetables like bell peppers, snap peas, or broccoli for added texture and nutrients. Use high-quality soy sauce and fresh ground black pepper for the best flavor. If you prefer a thicker sauce, mix a little extra cornstarch with water and stir it in during the last minute of cooking.
