Blackened Salmon with Avocado Cream

Salmon
- 4 6 oz portions salmon fillets
- Blackening seasoning
- Avocado or olive oil
- Fresh lemon
Heat 1-2 tablespoons of oil in a non-stick sauté pan over medium heat.
Season the skin side of the salmon with blackening seasoning.
Once the pan and oil are hot, gently add the salmon, skin side down. Season the top with blackening seasoning and cook for about 3 minutes until the skin is crispy.
Carefully flip the salmon and cook for another 2 minutes or until done to your liking. Cooking time will vary depending on the size and thickness of the salmon fillets.
Squeeze fresh lemon juice over the salmon, then remove it from the pan. Let it rest for 2 minutes before serving.
