Ingredients

For the Blackened Shrimp

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil For cooking the shrimp

For the Stroganoff Sauce

  • 1 cup sour cream
  • 1 cup beef broth Use vegetable broth for a vegetarian version
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz egg noodles Can substitute with spiralized zucchini for a lighter version

Instructions

Cooking the Noodles

  • Cook egg noodles according to package instructions; drain and set aside.

Preparing the Shrimp

  • In a bowl, toss shrimp with Cajun seasoning.
  • In a large skillet, heat olive oil over medium-high heat, add shrimp, and cook until they are blackened and cooked through, about 2-3 minutes per side.
  • Remove shrimp from skillet and set aside.

Making the Sauce

  • In the same skillet, add chopped onion and garlic; sauté until softened.
  • Pour in beef broth and bring to a simmer, stirring frequently.
  • Reduce heat and stir in sour cream, mixing until the sauce is creamy.
  • Add cooked noodles and blackened shrimp to the skillet; toss to coat.
  • Season with salt and pepper.

Notes

Serve hot, garnished with freshly chopped parsley. This dish is best enjoyed immediately. Store leftovers in an airtight container in the refrigerator for 2-3 days and reheat gently.
