  • 1 tablespoon lemon juice Adds brightness to the flavor.
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • In a blender, mix the blueberries, Greek yogurt, honey, lemon juice, and vanilla extract until completely smooth.
  • Taste the mixture and adjust the sweetness with additional honey if necessary.
  • Pour the creamy mixture into a suitable container and place it in the freezer.
  • Allow it to freeze for at least 4 hours or until firm.
  • Once frozen, scoop and serve into bowls.

Notes

For serving, top with granola, fresh mint leaves, or a drizzle of honey. Store in an airtight container in the freezer for up to a month, but best enjoyed within a couple of weeks.
